Expect approximately 25 lbs. of frozen cuts per half lamb depending on your processing choices i.e. bone-in versus boneless roasts. Custom processing done at Blackburn’s Meat Shop, Dillwyn, VA based on your choices. I will let you know when your lamb will be delivered there and when you should contact Mr. Dale Blackburn. He will help you with choosing cuts and you will pay him for the processing when you pick up your frozen cuts from his shop. (Processing costs will be approximately $50 for processing a half lamb depending on your choice of cuts, etc.) Mr. Blackburn usually cuts the rack of lamb into chops. However, if you prefer that he leave the rack whole please advise him of this when you are choosing your cuts with him. He can also make sausage with some of your lamb if you choose. I recommend choosing vacuum wrap packaging for maximum freshness.
